Workout Week Review

Last week was my first week back doing intense cardio and lifting workouts, as well as monitoring my eating. It was a semi successful week, the scale definitely did not reflect it but I’m feeling better and healthier. Kristin’s lifting workouts have definitely motivated me in the gym and also give my lifting some sort of purpose. She also helped me jump start my workout routine again. Now that I have a routine that I know I have to do I’m more motivated to make it to the gym and make sure I’m getting in quality reps and I”m doing the exercises correctly. I can’t wait to see what my results look like at the end of the 4 week period! I also started to really track everything on WeightWatchers, and when I say everything I mean EVERYTHING. Including all 53 points I ate on Saturday… Very bad day, Buffalo Wild Wings is not very WW friendly. But I’m moving on and trying to be better this week, which of course is going to be hard considering we are celebrating Jason’s birthday wednesday and then Thanksgiving on Thursday. Today was a good day though, stayed on point and ate really well, egg sandwich for breakfast, salad for lunch, and then banging good shrimp and fried rice from Skinnytaste. If you have ever had the bang bang shrimp from Bonefish grill, Skinnygirl’s is a great compromise. Instead of the heavy breaded shrimp, the shrimp are lightly pan seared with cornstarch and olive oil. She recreates the sauce using light mayo, sweet chili sauce, and Sriracha. It’s definitely delicious, and quick and easy to make!

Rainy Tuesday

Today has been a gloomy, rainy tuesday and all I’ve wanted to do is bake or curl up in a ball on the couch. Alas I managed to stay at work for a full 8 hours, and even convincedbegged my wonderful boyfriend to pick me up so that I wouldn’t have to walk to my car in the rain. Tomorrow the trainer will evaluate me to decide if I can run the Baltimore Half next month, I’m pretty nervous about how it’s going to go but I’m hoping for the best. I have a couple new recipes to share with you, but first lets recap the rest of the weekend!

Sunday was 93.1 WPOC’s annual Sunday in the Country Concert at Merriweather Post Pavilion. Every year WPOC puts on a country concert that features popular, and up and coming country music artists. Last year was my first year going, and I was so excited for this years. We started the morning around 10:30 and got our tailgate set up.

Jason had brought his friends cornhole boards and we had lots of beer and great food. Our friend Tori was even able to come out and join for a little bit.

The line up for this year included: Craig Campbell, Jana Kramer, Justin Moore, David Nail, Thompson Square, and Eric Church. They were all amazing in their own way and it would be hard to pick out just one as my favorite. Thompson Square’s chemistry and energy on stage was an awesome lead up to the headliner Eric Church.

The connection that Eric Church makes with his audience was incredible, and you could really tell that he was having a blast on stage. I definitely recommend anyone who loves country music to attend this concert at least once, its an awesome way to see a bunch of talented and amazing artists at once.

Recipes

So this week I’ve been trying some new recipes because I was getting bored of my old ones. Tonight I have two recipes, Shrimp Scampi and Skinny Chicken Pesto bake.

The Shrimp Scampi was inspired from Rachel Ray’s Butter me up Scampi Buccatini, you can find the original recipe here. I only made a few changes to it, I used fettucini instead of buccatini and I didn’t add the second lemon. It was delicious, but I definitely think the second lemon is needed to help cut down on the spiciness of the pasta.

The second recipe I have for you I got off of Skinnytaste’s website. I have a container of homemade pesto that my mom gave me and I wanted to get of some of it, to get some inspiration I wandered over to Skinnytaste’s website and she must have been reading my mind because the first recipe there was the Skinny Pesto Chicken Bake.  There was only one change I made was I omitted the tomatoes, I didn’t have any fresh tomatoes and I didn’t feel like running to the grocery store. I paired it with some herb and butter rice, and valley fresh steamers Broccoli medley.
